Rapeseed Honey is produced from the nectar of the rapeseed plant (Brassica napus), which blooms across Germany's agricultural landscapes in April and May in vast golden fields. The flowering season is brief but intensely productive. Bees visit the rapeseed flowers almost exclusively during this window, and the honey they produce is unlike any other among our Honey Varieties: it crystallises faster than any other variety, forming the extraordinarily fine, smooth, butter-like crystals that make it the only honey that genuinely spreads like jam. In Germany, Rapeseed Honey has been a breakfast table staple for generations. Rapeseed Honey is the breakfast honey. Its spreadable consistency makes it the most practical honey for morning food preparation, and its mild flavour integrates into almost every breakfast format without asserting itself.

On wholegrain toast: spread directly from the jar, exactly as you would use jam or butter. The consistency at room temperature is similar to soft butter. It will not drip or pool. It stays where it is applied.

On congee: drizzle or spoon over warm congee after it has been served. The honey will soften slightly with the residual heat but maintain its spreadable character. The mild sweetness complements the neutral flavour of plain congee without competing.

In oatmeal or porridge: stir one teaspoon into warm (not boiling) oatmeal after cooking. The honey dissolves gently, sweetening the porridge while adding prebiotic and enzyme benefit that sugar cannot provide.

Re-liquifying

If you prefer a softer or more liquid consistency, place the sealed jar in a bowl of warm water at 35-40°C and stir gently as it softens. Do not use boiling water or a microwave. Temperatures above 40-45°C begin to destroy the enzymes that make raw Rapeseed Honey worth using.
